
Beetroot
Beetroot is usually dark purple but does come in a variety of hues. It can also be round or cylindrical. Either way, beetroot is full of fibre, potassium and other minerals and the pigment (betacyanin) is said to have anti-cancer properties.
Uncooked beetroot bleeds easily if the skin is broken. It is often less messy to cook them in their skins (which should then slide off easily). Rubber gloves prevent fingers becoming too stained when handling. Wash carefully and leave the root on before boiling, steaming or roasting. It will be cooked when it can be easily pierced with a skewer. Beetroot can also be peeled, grated and used raw in salads. Beetroot lends itself well to pickles and chutneys.
