Purple Sprouting Broccoli
Purple sprouting broccoli is a cruciferous vegetable which means that it’s a close relative to cauliflower and calabrese (which is the type of broccoli more commonly found in the supermarkets) and a slightly more distant branch of the cabbage family. It’s highly nutritious, being packed full of vitamin C, iron, calcium and fibre. Store in the fridge, in a plastic bag to prevent drying out or wilting..
To prepare: wash thoroughly and trim any woody stalks, if necessary. The leaves are very tasty and do not need to be removed. Split any thick stems so that they take the same length of time to cook as the heads and then treat them as you would normal broccoli ie steam, boil or stir-fry.
